WATERMELON, RADISH & FETA SALAD

Ingredients
(feeds 4)
2tbsp pine nuts
400g watermelon
200g radishes , ideally with leaves
4 sprigs of fresh mint
50g feta cheese
Step 1
Toast the pine nuts until lightly golden.
Step 2
Prep time. Cut off the watermelon rind, pick out the seeds and finely slice. Thinly slice the radishes, keeping the leaves attached.
Step 3
Dress the watermelon and radish with 1tbsp of olive oil and 2tbsp of red wine vinegar. Taste and season.
Step 4
Plate the watermelon and radish then add the pine nuts, mint leaves and feta. This is such a quick recipe and so good on a humid summer's evening.
